The last post I did was on my fav movies and was part of a 15 day challenge....yup. you guessed it, totally didnt finish! ha
Well, I have had a few things on my mind, thought I would jot them down..
1. My babies. Look at them, aren't they cute!
2. Food. Food is always on the brain! I wanted to share two yummy recipes.
Yummy Chicken
2 Whole chicken breasts
3 tablespoons Shortenin/olive oil
⅓ cup Chopped onion
1 Clove (small) garlic; minced
2 1 cup Chicken broth
3 1 cup Cream
4 1½ teaspoon Salt
5 ⅛ teaspoon Pepper
6 2 teaspoons Worcestershire sauce
Preheat oven to 300. Cut chicken breasts in half crosswise, making 4 serving pieces. In heavy skillet, brown chicken in shortening until golden. Add remaining ingredients. Cover tightly. Bake about 2 hours or until tender. Just before serving, remove chicken from skillet while making pan gravy. Serve with rice or over potatoes.
Thai Coconut Chicken
| Prepared chicken broth | 1 1/4 cups | |
| Lime juice | 3 tbsp. | |
| Soy sauce | 2 tbsp. | |
| Finely grated gingerroot | 1 tbsp. I have used powder, 1 tsp or so. | |
| Grated lime zest | 1 tbsp. | |
| Garlic cloves, minced (or 1/2 tsp., | 2 | |
| 2 mL, powder) | ||
| Pepper | 1/4 tsp. | |
| Salt- to taste | ||
| Boneless, skinless chicken breast halves | 4 | |

| Brown sugar, packed | 1/4 cup | |
| Reduced-fat peanut butter | 2 tbsp. | |
| Sweet chili sauce | 1 tbsp. | |
| Light coconut milk | 1/2 cup, i put in more than this...just to taste | |
| Cornstarch | 2 tsp. | |

| Grated lime zest, for garnish | ||
Combine first 7 ingredients in medium frying pan. Bring to a boil. Reduce heat to medium.
Add chicken. Cook, covered, for 12 to 15 minutes, turning at halftime, until chicken is no longer pink inside. Transfer chicken to serving plate. Cover to keep warm.
Whisk next 3 ingredients into broth mixture until smooth. Bring to a boil.
Stir coconut milk into cornstarch in small cup. Slowly add to broth mixture, stirring constantly with whisk, until boiling and slightly thickened. I will put the chicken back and and let it simmer for a while. I put this over rice.
Add chicken. Cook, covered, for 12 to 15 minutes, turning at halftime, until chicken is no longer pink inside. Transfer chicken to serving plate. Cover to keep warm.

3. Eyelashes.....Love My Lashes is keeping me busy....maybe too busy at times but I am enjoying it.
4. We are going to San Diego at the end of April and I am so excited to go. We are going with my family and it is going to be super fun! Me and Chris have been doing Insanity together in the morning. Every morning when the alarm goes off, I lay there, and Chris tells me to get out of bed..ha. Hopefully, we will be swimsuit worthy in the next couple of months....ugh, probably not though, i dont think i have put a swimsuit on comfortably since I was 8.. but heres hopin!
5. Dry Skin. I dont want this to be on my mind, but honestly is anyone elses skin DRYYYYEEEEE!
6. Cleaning my house. When I was pregnant with Navy for the last couple of weeks and for about two months after she was born, I got someone to come in and help me clean. Well. I need her back! I just cant seem to keep up with cleaning my house... Ive tried to do certain things on certain days and I just cant do it...So instead, you guessed it, I just think about doing it.....
7.clothes..shopping... What I really need is a new skirt...a pencil skirt is what I really want but can never find one that fits...sad...
I went onto aldoshoes.com and they had ton of cute boots for cheap... right after Christmas and RIGHT NOW is the best time to buy boots....so my recommendation....go buy some! yes, i have given you permission.
well, that about raps it up.. those are some of the things that have been on my brain......

We're going to be in San Diego at the end of April too (it's Mags' 5th birthday on the 21st so we're going to Disneyland)! Maybe we'll run into each other...
I love Thai food... I'll definitely be cooking that chicken up.
well you are lookin GOOD miss insanity. just the other day crystal and i were saying how bad we want a pencil skirt and can't find one. i think your chances of finding a pencil skirt will greatly improve in san diego, have fun!
oh yummy recipes!!! and go you doing insanity every morning! I have watched some of the videos on you tube and i feel sick and tired just watching them. you are amazzzinng! and i have GOT to come get some of these lusciously long lashes from you!!!
Insanity... gotta love Sean T:) I have to say that I actually started to miss that crazy workout when I was pregnant. weird, right? But don't worry I came to my senses and now that I am only weeks away from being given the green light to work out again, I am not missing it so much... anyway that is awesome that you are doing that because it is DANG hard and you already look amazing.
those recipes sound divine! and a trip to San Diego with your fam sounds like such a fun time....I love having family reunions to look forward to! AND your babies are absolutely beautiful!!
